Healthy Egg Muffins
INGREDIENTS
- 3 eggs
- 3 egg whites
- 1/2 cup low fat milk
- 1/4 cup onion chopped
- 2 cups raw spinach
- 1 tomato chopped
- 4 english muffins halved
- 1 dash salt
- 1 dash pepper
- 1 spray cooking spray
DIRECTIONS
- Whisk eggs and egg whites together. Add the milk to the eggs.
- Spray a pan with oil and put over medium heat.
- Sauté onions for 1-2 minutes before adding eggs. Add spinach and tomato and cook until spinach is wilted.
- Add the egg mixture to the hot pan and cook for 5 minutes or until eggs are cooked. Season with salt and pepper.
- Divide the egg into four servings and serve on the English muffin.
