SUMMER STRAWBERRY POPPY SEED SALAD

INGREDIENTS
For the dressing
2 tablespoons onion minced
1 1/2 teaspoons sugar
1 1/2 teaspoons poppyseeds
1 12 tablespoons white wine vinegar
1/2 cup mayonnaise
3/4 cup buttermilk
1 lemon zested
2 tablespoons lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
For the salad
6 cups mixed greens
1 carrot peeled and grated
3/4 cup cucumber thinly sliced
1 1/2 cup strawberries hulled and quartered
1/2 cup feta or goat cheesecrumbled
4 tablespoons pumpkin seeds
4 tablespoons toasted almonds
pea shoots or other sprouts optional
INSTRUCTIONS
- In a 2 cup glass measuring cup or bowl combine the onion, sugar, poppyseed, vinegar, mayonnaise, buttermilk, lemon zest and juice, salt and pepper. Whisk to combine and season to taste.
- In a large bowl combine the ingredients for the salad and serve with dressing on the side.
