Healthy Egg Muffins


  • 3 eggs
  • 3 egg whites
  • 1/2 cup low fat milk
  • 1/4 cup onion chopped
  • 2 cups raw spinach
  • 1 tomato chopped
  • 4 english muffins halved
  • 1 dash salt
  • 1 dash pepper
  • 1 spray cooking spray



  1. Whisk eggs and egg whites together. Add the milk to the eggs.
  2. Spray a pan with oil and put over medium heat.
  3. Sauté onions for 1-2 minutes before adding eggs. Add spinach and tomato and cook until spinach is wilted.
  4. Add the egg mixture to the hot pan and cook for 5 minutes or until eggs are cooked. Season with salt and pepper.
  5. Divide the egg into four servings and serve on the English muffin.
